Today, we’re diving into the world of sheet pan quesadillas, and trust me, you won’t want to miss this!. No more boring, bland tortillas and fillings!

Imagine a world where you can make a batch of quesadillas all at once, with a perfectly crispy exterior and a gooey, cheesy interior. Sounds like a dream come true, right? Well, it’s time to wake up and smell the cheese, because we’re about to make it happen!

First, preheat your oven to 375 degrees F. While that’s heating up, heat some olive oil in a large skillet over medium heat. Add in some chopped onions and bell peppers and cook until they’re just starting to soften. Remove them from the skillet with a slotted spoon and set them aside.

Next, add in some chopped chicken breast and cook until it’s no longer pink on the outside. Return the onions and bell peppers to the skillet, stir in some water and fajita seasoning, and cook until the chicken is completely cooked through.

Now it’s time to build our quesadillas. Place 6 tortillas around the edges of a half sheet pan, with about half of each tortilla hanging over the side. Place another tortilla in the center to cover the pan completely. Using a slotted spoon, top with the chicken, onion, and pepper mixture in an even layer. Sprinkle some shredded Mexican cheese blend evenly over the top.

Place another tortilla in the center on top of all the fillings, then fold each tortilla over the toppings towards the center. Place a second half baking sheet on top of the tortillas to help them hold their shape.

Bake in the preheated oven for 10 minutes, then remove the top baking sheet and continue baking until the tortillas are golden and crispy, about 8-12 more minutes.

Slice into rectangles and serve topped with sour cream, pico de gallo, and fresh cilantro. These quesadillas are easy to customize with whatever filling you prefer, so don’t be afraid to get creative!

And the best part? These quesadillas are perfect for parties, because you can make a whole batch at once and serve them all at the same time. Your guests will love the crispy exterior and gooey interior, and you’ll love how easy they are to make.

So go ahead, give these sheet pan quesadillas a try, and get ready to indulge in the most epic quesadilla extravaganza of your life!
