Meanwhile, heat some sun-dried tomato oil in a large skillet over medium-high heat. Add your shrimp and cook until they’re pink on both sides and just cooked through, about 2 minutes per side. Transfer them to a separate bowl and set them aside.
Next, add some sun-dried tomatoes, tomato spread, and garlic to the same skillet. Cook, stirring constantly, until fragrant, about 1 minute. Stir in some flour and continue cooking, stirring constantly, for another minute.

Now it’s time to add some wine to the skillet, scraping up any browned bits from the bottom of the pan. Bring the mixture to a simmer and cook, undisturbed, until it’s slightly reduced, about 2 minutes.
