Loaded Mashed Potato Casserole

Get ready for a side dish that’s about to become the star of the show This loaded mashed potato casserole is a game-changer, packed with creamy mashed potatoes, crispy bacon, and a blend of cheeses that will make your taste buds do the happy dance.

First things first, let’s talk about the potatoes. You want to use high-quality spuds that are going to yield a fluffy and smooth mash. Russet or Yukon golds are the way to go, and aim for about 1/2 pound per person. For this recipe, we’re using 4 pounds of potatoes, which should serve 8-10 people.

Now, let’s get started Preheat your oven to 350°F (180°C). While that’s heating up, let’s get our potatoes peeled and chopped into large chunks. Place them in a big pot and add enough cold water to cover them. Bring to a boil over high heat, then reduce the heat to medium-low and simmer for 15-20 minutes, or until the potatoes are tender when pierced with a fork.

While the potatoes are cooking, let’s get our bacon crispy. Cook 6 slices of bacon in a skillet over medium heat until it’s nice and golden brown. Remove the bacon from the skillet and set it aside on a paper towel-lined plate. Leave the grease in the skillet, because we’re going to use it to add some extra flavor to our potatoes.

Once the potatoes are done, drain them and return them to the pot. Add in 1/4 cup of milk, 2 tablespoons of butter, and a pinch of salt and pepper. Mash those potatoes until they’re smooth and creamy, then stir in 1 cup of shredded cheddar cheese, 1/2 cup of sour cream, and 1/4 cup of chopped green onions.

Now it’s time to assemble our casserole. In a 9×13 inch baking dish, spread half of the mashed potatoes in the bottom of the dish. Top with half of the crispy bacon, half of the shredded cheese, and half of the chopped green onions. Repeat the layers, starting with the remaining mashed potatoes, then the remaining bacon, cheese, and green onions.

Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and continue baking for an additional 10-15 minutes, or until the top is golden brown and the casserole is heated through.
