Cook: 3 hours
Yields: not applicable

Get ready to indulge in the most epic sugar extravaganza of your life!

Today, we’re diving into the world of toasted sugar, and trust me, you won’t want to miss this!. No more boring, plain sugar!

I love using my thermometer to ensure my oven is at the perfect temperature for toasting sugar. It’s a total game-changer!

Now, let’s get started To make this magical toasted sugar, you’ll need to preheat your oven to 300°F (150°C). While that’s heating up, pour 4 pounds (9 cups; 1.8kg) of granulated white sugar into a 9- by 13-inch glass or ceramic baking dish. Yes, you read that right – 4 pounds of sugar!

Once your oven is hot, place the sugar in the oven and toast until it turns ivory, about 1 hour. Stir thoroughly and continue roasting, pausing to stir every 30 minutes. The sugar will produce steam as a byproduct of toasting, so it must be stirred well to allow that moisture to escape.

As you stir, you’ll start to notice the sugar changing color and developing a rich, caramel flavor. It’s like magic, I tell you Continue toasting and stirring every 30 minutes until the sugar has darkened to the desired degree, from a light beige to the color of traditional brown sugar, between 2 and 4 hours more.

When the sugar has finished toasting, set it aside and let it cool to room temperature, stirring from time to time to speed the process and allow for continued evaporation of steam. Alternatively, the cooling process can be sped along by pouring the sugar into a large, heat-safe container.

Once the sugar has cooled, transfer it to an airtight container and store it as you would plain white sugar. It can be used interchangeably, by weight or volume, in any recipe that calls for white sugar. And the best part? It’s perfect for desserts that would be ruined by caramel syrup, like angel food cake and marshmallows.
