Frozen Chocolate Pie (No Bake!)

Time to cool down with a big slice of this sweet buttermilk chocolate icebox pie! Simple ingredients and about 5 minutes is all you need to whip this no-bake pie together.

Are you guys ready for Summer weather yet? We definitely are! It’s been rain rain rain here, and it’s driving me nuts. I’m so ready for the warm sunshine, a summer breeze, and great summer desserts!
This icebox pie is made really easily, and is a natural make-ahead dessert. Chocolate is a family favorite flavor, and the buttermilk here adds a beautiful slight tang to counter all the chocolatey sweetness!

Whenever I’m making this icebox pie for a party, I make it up the night before, that way it gets a full 12+ hours to freeze.
Just make sure to set the pie out about an hour before you want to serve it, so it’s easier to slice and eat.
When I need to make this easy recipe even EASIER, I pick up a pre-made chocolate cookie crust from the store.
I don’t think it tastes as good as the homemade version though, so if you can, definitely go for the version in the recipe. That does require baking to help it hold together, but it’s a short baking time.
I also use frozen whipped topping that’s been thawed, both in the pie filling itself and on top of the pie. If you’d prefer to use homemade ingredients, whip up a big batch of homemade whipped cream with a little sugar.

The chocolate ganache drizzle on top is optional, but SO recommended! If you’re worried about making a ganache, it’s actually incredibly easy.
Traditionally, ganache is made by warming heavy cream in a saucepan and pouring it into a bowl with chocolate. You can certainly do that, but this version tastes every bit as good, and you don’t have to dirty a saucepan!
For an adult version of this ganache, replace 2 oz of the heavy cream with Baileys Irish Cream and make the ganache as written!

Ingredients
- 1 pre-made chocolate cookie crust
- 1 cup buttermilk
- 1 cup frozen whipped topping (thawed)
- 1 cup chocolate pudding mix
- 1 cup heavy cream
- 2 oz Baileys Irish Cream (optional for ganache)
- 1/2 cup chocolate chips (for ganache)
Instructions
- 1. Prepare a chocolate cookie crust and place it in a pie dish.
- 2. In a mixing bowl, combine thawed frozen whipped topping and buttermilk.
- 3. Add chocolate and mix until well blended.
- 4. Pour the filling into the prepared crust and smooth the top.
- 5. Freeze the pie for at least 12 hours before serving.
- 6. Before serving, remove the pie from the freezer and let it sit for about an hour.
- 7. Optionally, drizzle with chocolate ganache before serving.
