– 2 large eggs (room temperature)
– 1 cup milk (room temperature)
– 3 Tbsp melted unsalted butter
– ¼ cup water

Instructions:
1. In a large bowl, whisk together the flour, salt, eggs, milk, melted butter, and water. The batter should be thin enough to run off the spoon like a reluctant toddler.
2. Let the batter rest at room temperature for 30 minutes (or up to two days if you’re patient enough). This will allow the gluten to relax and make your crepes extra tender.
