Creamy King Ranch Mac N Cheese

Prep: 45 minutes
Cook: 5-10 minutes
Yields: not applicable

Are you ready to shake up your classic mac and cheese recipe? Look no further! Today, we’re diving into the world of creamy, cheesy pasta, and trust me, you won’t want to miss this.

Imagine a dish that combines the best of both worlds – the comforting warmth of mac and cheese, and the bold flavors of King Ranch chicken. It’s a match made in heaven, folks!

First things first, preheat your oven to 400°F. While that’s heating up, boil your pasta according to the package directions and drain. Don’t worry, we’ll get to the good stuff soon!

Next, heat a large skillet over medium heat. Melt some butter in the skillet and sauté the onion and bell peppers for 7-8 minutes, until they’re soft and fragrant. Add in some garlic and cook for one more minute, because everything is better with garlic, right?

Now it’s time to add in the diced tomatoes and cook until almost all of the liquid has evaporated. This is where things start to get really good! Next, incorporate the cubed cheese into the mix and stir continuously until the cheese is melted and gooey.

Mix in some sour cream and half and half, because why not? Season with cumin and cayenne pepper to give it a little kick. Finally, add in some cooked chicken and stir until everything is well combined.

In a 3-quart Dutch oven or baking dish, combine the chicken and cheese mixture with the cooked pasta. If your skillet is large enough and oven-safe, you can skip this step and just add the pasta to the skillet.

Sprinkle some grated cheese on top, because you can never have too much cheese. Bake for 5-10 minutes until the cheese is melted and bubbly. Serve immediately and enjoy the ooohs and ahhhs from your family and friends!

This King Ranch mac and cheese is the perfect comfort food for a chilly evening. It’s creamy, cheesy, and packed with flavor. And the best part? It’s easy to make and can be customized to your liking.

So go ahead, give it a try, and let me know what you think! And if you’re feeling adventurous, try adding some diced jalapenos or sliced black olives to give it an extra kick.
