Country Ham And Biscuits Recipe
Prep: 15 minutes
Cook: 30 minutes
Yields: 6-8 servings
Country ham and biscuits, the ultimate comfort food duo! It’s a match made in heaven, folks. And today, we’re going to dive into the world of flaky, buttery biscuits and savory, salty country ham.
First things first, let’s talk about the star of the show: country ham. This dry-brined, salt-cured ham is best served thinly sliced, and if you can’t find it, don’t worry, any type of thinly sliced ham will do the trick.
Now, onto the biscuits! We’re talking about a recipe that’s been passed down through generations, and it’s still a crowd-pleaser to this day. With just a few simple ingredients, you’ll be on your way to biscuit heaven.
Preheat your oven to 425 degrees F (220 degrees C). Yes, it’s hot, but trust us, it’s worth it. Grease an 8-inch cast-iron skillet with some good ol’ shortening. You know, the kind that’ll make your biscuits taste like grandma used to make.
In a large mixing bowl or food processor (we won’t judge you if you use the latter to save time), sift together 3 cups of flour, 1 tablespoon of sugar, 1 tablespoon of baking powder, 1/2 teaspoon of salt, and 1/2 teaspoon of cream of tartar. Mix or pulse until it’s all combined and lovely.
Cut in 1/2 cup of cold butter and 1/4 cup of shortening until you get a crumbly consistency. Don’t overdo it, or you’ll end up with tough biscuits. Add in 1 1/4 cups of whole buttermilk and gently stir until it’s all combined. Be careful not to overmix, or you’ll end up with… well, you know.
Turn out the dough onto a floured surface and pat it down to about 2-inch thickness. Use a 2 1/2-inch biscuit cutter to cut out 6 to 8 biscuits. Transfer them to the greased skillet and bake for about 30 minutes, or until they’re golden brown.
While the biscuits are baking, cook the ham. Add 1 teaspoon of bacon grease (yes, you read that right) to a cast-iron skillet over medium heat. Add 3 slices of country ham and fry until the edges are brown, about a few minutes per side. Remove the ham from the skillet and place it on a paper towel-lined plate to drain. Cut each slice in half.
To serve, split each biscuit in half, spread with softened butter, and sandwich with a piece of ham. It’s a match made in heaven, folks!

So, what are you waiting for? Get baking (and frying) and indulge in this comfort food extravaganza!

It’s the perfect addition to any party, and we’re not just saying that because of the bacon grease.

These biscuits are so easy to make, even your mama would be proud.
