Spread the potatoes out over the prepared baking sheet, then add a second tablespoon of olive oil, 1 tsp smoked paprika, ½ tsp garlic powder, ¼ tsp salt, and some freshly cracked black pepper. Toss the potatoes to coat them in oil and spices.

Roast the potatoes in the preheated oven for about 40-45 minutes or until they are golden brown and crispy. Stir once halfway through roasting.
