To start, whisk together 2 tablespoons of water, 2 teaspoons of sesame oil, and 1 teaspoon of cornstarch in a large bowl. Add in those chicken breast tenderloins, cut into thin strips, and toss to coat. Set aside for now, we’ve got some sauce to whip up!

In a separate bowl, combine 4 tablespoons of water, 1 teaspoon of sesame oil, hoisin sauce, oyster sauce, and soy sauce. Whisk until smooth and set aside – this sauce is the magic that brings it all together!

Heat 1 teaspoon of oil in a skillet over medium heat, and add in those beaten eggs. Cook for 3 minutes, flip, and cook until firm and set. Slice into thin strips and set aside – we’ll get back to these later!

Add the marinated chicken to the skillet, and cook over medium-high heat for 6 minutes. Flip, and cook until golden brown on the outside and the juices run clear. Transfer to a plate, and get ready for the grand finale!

Heat the remaining 1 teaspoon of oil in the skillet over medium-high heat. Add in the shredded cabbage, sliced shiitake mushrooms, minced garlic, and a splash of sherry. Cook until the cabbage starts to wilt, about 2 minutes.

Add the cooked chicken, sliced eggs, and reserved sauce to the skillet. Cook, stirring occasionally, until the sauce has thickened, about 5 minutes. Toss in some chopped green onions, and serve immediately – it’s time to devour!
