- 1 onion, diced
- 1 celery stalk, diced
- 1 bell pepper, diced
- 1 pound ground beef
- 1 can crushed tomatoes (28 oz)
- 1 can tomato sauce (15 oz)
- 1 tablespoon Italian seasoning
- 4 cups beef broth
- 2 medium potatoes, diced
- 1 can diced tomatoes with green chilies (14.5 oz)
- 1 cup corn
- 1 cup black beans, drained and rinsed
- 1 cup provolone cheese, shredded
- 1 cup mozzarella cheese, shredded
- 1 loaf of toasted bread
Instructions
- 1. Sauté onion, celery, and bell pepper until soft.
- 2. Add ground beef and season generously.
- 3. Stir in crushed tomatoes, tomato sauce, and Italian seasoning. Let simmer until thick.
- 4. Pour in beef broth, diced potatoes, and diced tomatoes with green chilies. Simmer until potatoes are tender.
- 5. Stir in corn and black beans.
