Ingredients
- 2 pork tenderloins
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon chopped dates
- 1 teaspoon fresh rosemary
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 3 rainbow carrots, peeled and chopped
- 1 butternut squash, peeled and chopped
Instructions
- 1. Whisk together olive oil, dates, vinegar, rosemary, garlic, salt, and pepper in a bowl.
- 2. Peel and chop rainbow carrots and butternut squash, then toss them in the balsamic mixture.
- 3. Spread the veggies out on a sheet pan and pop it in the oven for 20 minutes at 375 degrees.
- 4. While the veggies roast, heat oil in a skillet and sear the pork tenderloins on both sides.
- 5. Nestle the seared tenderloins amidst the roasted veggies on the sheet pan, brush with reserved balsamic mixture, and return to the oven for another 20 minutes.
- 6. Once the pork is cooked through and the veggies are tender, drizzle with remaining olive oil and serve.
