Get ready for a taste sensation that will make your taste buds do the happy dance! Today, we’re diving into the world of baked pumpkin spice donut holes, and trust me, you won’t want to miss this.

No let’s get started! Preheat your oven to 400°F (200°C). While that’s heating up, let’s get our ingredients ready. You’ll need a cookie scoop, a mini muffin tin, and a baking sheet lined with parchment paper.
Now, let’s talk about the batter. In a large bowl, whisk together 1 1/2 cups of all-purpose flour, 1/2 cup of granulated sugar, 1/2 cup of brown sugar, 1/2 teaspoon of baking powder, 1/2 teaspoon of salt, 1/2 teaspoon of ground cinnamon, 1/4 teaspoon of ground nutmeg, and 1/4 teaspoon of ground ginger.
In a separate bowl, whisk together 1/2 cup of milk, 1 large egg, and 2 tablespoons of melted butter. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix!
Now it’s time to scoop the batter into the mini muffin tin. Use the cookie scoop to portion out the batter, filling each cup about 2/3 full. You should end up with around 24 donut holes.

Place the muffin tin on the prepared baking sheet and bake for 12-15 minutes, or until the donut holes are golden brown. Remove them from the oven and let them cool in the tin for 5 minutes.
Transfer the donut holes to a wire rack to cool completely. While they’re cooling, let’s talk about the fun part – the cinnamon sugar coating! In a small bowl, mix together 1/2 cup of granulated sugar and 1 tablespoon of ground cinnamon.
Once the donut holes are cool, dip each one in melted butter and then roll them in the cinnamon sugar mixture. Place the coated donut holes on a plate or tray and serve immediately.

And that’s it! You now have a batch of delicious baked pumpkin spice donut holes that are perfect for snacking or as a dessert. Enjoy!
