Cowboy Casserole With Tater Tots

Howdy, partners! Today, we’re saddling up for a rootin’-tootin’ good time with a hearty Cowboy Casserole that’ll make your taste buds do a little dance!

This ain’t your average casserole, folks! We’re talkin’ crispy tater tots, creamy filling, and a whole lotta flavor packed into one delicious dish. So, grab your apron and let’s get started!

First, preheat your oven to 375 degrees F (190 degrees C) with a rack in the center position. While that’s heating up, cook some thick-cut bacon in a large cast-iron skillet over medium heat until it’s browned and crispy. Remove the bacon from the skillet, reserving 2 tablespoons of the drippings for later.

Add some chopped yellow onion and red bell pepper to the skillet and cook until they’re softened, about 4 minutes. Then, increase the heat to medium-high and add in some ground sirloin and hot pork country sausage. Cook until the beef is crumbly, browned, and no longer pink, about 6 to 8 minutes.

Add some chopped garlic to the skillet and cook for 1 minute, stirring constantly. Remove the skillet from the heat and drain the fat, if desired. Stir in some condensed cream of mushroom soup, whole milk, sour cream, kosher salt, and black pepper. Then, add in some frozen corn kernels, cooked bacon, and half of the shredded extra-sharp Cheddar cheese.

Sprinkle the remaining cheese evenly over the top of the casserole and arrange some frozen tater tots in concentric circles over the cheese layer. You’ll have about 1 1/2 cups of tots leftover, so reserve those for another use.

Bake the casserole in the preheated oven until the top is golden brown and the beef mixture is bubbly, about 35 minutes. Let it sit for 5 minutes before serving, then sprinkle with some chopped fresh flat-leaf parsley and serve hot!
