Instant Pot Meatloaf With Apple And Ketchup Glaze

Today, we’re diving into the world of comfort food, and trust me, you won’t want to miss this! Imagine a juicy, flavorful meatloaf that’s made in a fraction of the time, thanks to the magic of the Instant Pot.

First, let’s get our meatloaf mixture ready. In a large bowl, combine ground beef, dry bread crumbs, diced onion, apple, egg, garlic powder, salt, and pepper. Mix everything together until it’s just combined – don’t overmix!

Next, shape the beef mixture into a loaf and place it on a large piece of aluminum foil. Fold the foil up and around the edges of the meatloaf, creating a makeshift loaf pan.

Now, pour 1/2 cup of water into your Instant Pot and place the steam rack inside with the handles up. Place the meatloaf on top of the rack, close and lock the lid, and seal the vent. Select high pressure and set the timer for 25 minutes. Let the pressure build for 10-15 minutes – the anticipation is building!

While the meatloaf is cooking, preheat your oven’s broiler. Yes, you read that right – we’re going to give our meatloaf a nice, caramelized crust.

Once the meatloaf is done cooking, carefully release the pressure using the quick-release method. Unlock and remove the lid, and transfer the meatloaf to a baking sheet. Broil the meatloaf in the oven until it’s browned and caramelized – about 5 minutes.

Meanwhile, let’s make the topping. In a small bowl, combine ketchup, mustard, and brown sugar. Brush the topping over the meatloaf and broil again until it’s caramelized and sticky – 1-2 minutes.
