Marry Me Chicken With Sun-Dried Tomatoes And Cream

Prep: 15 minutes
Cook: 45 minutes
Yields: 4 servings

Get ready to fall head over heels in love with this dish – it’s so divine, it might just lead to a proposal!

Imagine a juicy chicken breast, smothered in a rich and creamy sauce, infused with the sweetness of sun-dried tomatoes and the tanginess of fresh basil. Sounds like a match made in heaven, right?

First, preheat your skillet over medium heat and add a drizzle of olive oil and a pat of butter. Yes, you read that right – butter! It’s the secret ingredient that makes this dish truly unforgettable.

While the butter is melting, season your chicken cutlets with a pinch of salt and a sprinkle of black pepper. Don’t be shy – you want that flavor to pop!

Add the chicken to the skillet and cook until it’s lightly browned on both sides and reaches an internal temperature of 165°F. This should take about 2-3 minutes per side, but trust your instincts – you want it to be cooked to perfection.

Once the chicken is cooked, transfer it to a plate and cover it with aluminum foil to keep it warm. Don’t worry, it’s not going anywhere – it’s just taking a little break while you work on the sauce.

Add some chopped shallots, red pepper flakes, oregano, and thyme to the skillet and cook until the shallots start to soften. This is where the magic happens, folks!

Next, add some minced garlic and chopped sun-dried tomatoes to the skillet and cook for another minute. The aroma alone will make your taste buds do the happy dance.

Now it’s time to add the tomato paste and stir it in to coat the vegetables. Cook for another minute, until it’s fragrant and delicious.

Pour in some white wine and chicken broth, scraping up any flavorful bits from the bottom of the skillet. This is where the sauce starts to come together – and it’s going to be epic!

Reduce the heat to medium-low and add some heavy cream to the skillet. Stir it in and let it simmer until the sauce starts to thicken – about 2 minutes.

Return the chicken to the skillet and simmer it in the sauce until it’s fully coated. This is the moment of truth – the chicken and sauce are finally together, and it’s a beautiful thing!

Remove the skillet from the heat and stir in some grated Parmigiano Reggiano cheese. Because everything is better with cheese, am I right?

Add a pat of butter and a drizzle of balsamic vinegar to the skillet and stir until the butter is fully melted into the sauce. This is the final touch – the icing on the cake, or should I say, the sauce on the chicken!

Garnish with some grated Parmigiano Reggiano cheese and fresh basil leaves, and you’re ready to serve. This dish is sure to impress – and maybe even lead to a proposal!
