On a chilly night, this tortellini soup recipe is the perfect way to warm up and fill your belly with goodness. It’s easy to make, flavorful, and fun to eat!
First, heat some olive oil in a large pot over medium heat, and sauté those onions, carrots, and fennel until they’re soft and fragrant. Then, stir in some garlic, vinegar, tomatoes, broth, thyme, and red pepper flakes. Cover it up and let it simmer for 30 minutes, allowing all those flavors to meld together.
In the meantime, cook and drain those tortellini. Add them to the soup along with some kale leaves, and simmer for 2 minutes more.

- 3 cloves garlic, minced

- 1 can (14.5 oz) diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1/2 teaspoon red pepper flakes
- 9 ounces tortellini
- 2 cups kale leaves
