Smoky Grilled Pork Chops Al Pastor

Imagine the flavors of your favorite taco, but in a tender, double-thick pork chop, smothered in a rich, smoky chili marinade that doubles as a sauce, and served with a refreshing pineapple salsa on the side.

First, let’s start with the marinade. In a blender, combine pineapple, guajillo chili pepper, New Mexico chili powder, chipotle, cinnamon, salt, white vinegar, garlic, and onions. Blend until smooth, then pour the marinade into a resealable plastic bag with the pork chops. Massage the meat to coat evenly, press out the air, and refrigerate overnight or up to 48 hours.

When you’re ready to cook, preheat your oven to 325 degrees F. Heat some olive oil in an oven-safe pan over medium-high heat. Remove the pork chops from the marinade, scraping off as much excess as possible, and reserve the marinade for the sauce. Sear the chops in the hot pan until lightly browned, about 3 minutes per side.

Remove the chops from the pan and set them aside. Add some yellow onion, cumin, and dried oregano to the pan, and cook for 1 minute. If the pan seems dry, add a drizzle of oil. Turn off the heat, pour in some water, and stir to scrape up any brown bits from the bottom of the pan.

Place the pork chops on top of the onion mixture and roast in the preheated oven until cooked to your liking, 20 to 30 minutes, basting or brushing with pan juices occasionally. Use an instant-read thermometer to ensure the internal temperature reaches 140 to 145 degrees F for juicy, tender meat.

While the pork is cooking, pour the reserved marinade into a saucepan, add some water to achieve the desired thickness, and bring to a simmer over medium-high heat, whisking occasionally. Taste and adjust the seasoning as needed.

To make the pineapple salsa, combine diced white onion, pineapple, fresh oregano, salt, and lime juice in a bowl and mix thoroughly.

Once the pork is done, remove it from the oven and let it rest for 5 to 10 minutes before serving. While it’s resting, garnish the tops with the warm sauce and a spoonful of pineapple salsa.
