Yields: 4 servings

Get ready to dive into the spicy world of Cajun cuisine with this mouth-watering shrimp and sausage pasta bake!

This dish is a flavor bomb, packed with succulent shrimp, spicy andouille sausage, and a creamy Cajun Alfredo sauce that will leave you craving for more!

First, preheat your oven to 375 degrees F (190 degrees C) and grease a 9×13-inch casserole dish. While that’s heating up, cook your penne pasta according to the package instructions until it’s al dente. Reserve 1/2 cup of pasta water before draining – you’ll need it later!

In a large skillet, melt 1 tablespoon of butter over medium heat. Add 1/2 chopped onion and 1/2 chopped red bell pepper and cook until they’re softened, about 3-5 minutes. Then, add 8 ounces of andouille sausage, quartered, and 8 ounces of shrimp, peeled and deveined. Stir well and let the residual heat cook the shrimp and warm the sausage.

Now, it’s time to make the creamy Cajun Alfredo sauce. In a saucepan, melt 1 tablespoon of butter over medium heat. Whisk in 1 tablespoon of flour, 2 cloves of minced garlic, and 1 tablespoon of Cajun seasoning. Slowly pour in 1/2 cup of 2% milk, 1/2 cup of half and half, and the reserved pasta water, whisking constantly until the sauce is smooth and bubbly.

Stir in 4 ounces of garlic and herb spreadable cheese and 1 cup of freshly grated Parmesan cheese until melted and creamy. Season with salt and pepper to taste.

Now, it’s time to assemble our pasta bake. Transfer half of the cooked pasta to the skillet with the sausage and shrimp mixture. Then, transfer the remaining pasta to the prepared casserole dish. Pour half of the Cajun Alfredo sauce over the pasta in the casserole, followed by the sausage and shrimp mixture. Top with the remaining sauce and sprinkle with extra Parmesan cheese.

Cover the casserole with foil and bake for 25 minutes, or until heated through and bubbly. Remove the foil and serve immediately, garnished with chopped parsley or scallions if desired.

This Cajun shrimp and sausage pasta bake is a game-changer for any pasta lover. The spicy andouille sausage, succulent shrimp, and creamy Cajun Alfredo sauce come together in perfect harmony. So, go ahead and indulge in this flavorful dish – your taste buds will thank you!
