First, preheat your oven to 350 degrees F (175 degrees C). While that’s heating up, bring 1 cup of water and ½ cup of brown rice to a boil in a saucepan. Reduce the heat to medium-low, cover, and let it simmer until the rice is tender and the liquid is absorbed, which should take around 45 to 50 minutes.

Meanwhile, warm a large skillet over medium heat. Add 1 pound of lean ground beef, 1 chopped onion, and 2 cloves of minced garlic to the hot skillet. Cook and stir until the meat is evenly browned and the onion is softened, about 5 minutes. Set it aside for now.

Now, it’s time to prepare our bell peppers. Remove and discard the tops, seeds, and membranes of 2 green, 2 red, and 2 yellow bell peppers. Arrange them in a baking dish with the hollowed sides facing upward. If needed, slice the bottoms off the peppers so they stand upright.

In a bowl, mix the browned beef, cooked rice, 1 can of natural tomato sauce, 1 tablespoon of Worcestershire sauce, salt, and ground black pepper. Spoon this mixture into each hollowed pepper.

Mix the remaining tomato sauce with 1 teaspoon of Italian seasoning in a bowl; pour it over the peppers. Bake in the preheated oven, basting with sauce every 15 minutes, until the peppers are tender, about 1 hour.
