Ingredients

  1. 1 pound chorizo
  2. 4 large bell peppers
  3. 1 cup cooked rice
  4. 1/2 cup diced onions
  5. 1 can black beans, drained and rinsed
  6. 1 teaspoon cumin
  7. 1 teaspoon chili powder
  8. 1 cup shredded cheese
  9. 1 tablespoon olive oil

Instructions

  1. 1. Heat olive oil in a large skillet and cook chorizo until it's cooked through.
  2. 2. Set the chorizo aside and let it cool down.
  3. 3. Cut off the tops of the bell peppers and scoop out the seeds.
