We’ve kept it simple so you can easily mix and match ingredients from your fridge. It’s like a culinary playground where anything goes!

To get started, gather 1 1/2 lbs. of sweet potatoes and 1 onion and red bell pepper each. Wash, peel, and dice them into bite-sized pieces.

Now, in a large skillet, let’s bring the sausage to life. Crumble 8 oz. of your favorite breakfast sausage and cook it over medium heat until it’s almost fully browned. Add the diced onion and cook until it becomes translucent and the sausage reaches its golden crisp.

Next, remove the sausage and onion duo to a separate plate and set it aside.
In the same skillet, let’s introduce the sweet potatoes. Add 1/2 Tbsp of cooking oil and pour in the diced sweet potatoes. Cook them over medium heat for 10-12 minutes, stirring occasionally to let them brown. Don’t worry if they’re not fork tender yet; they’ll continue cooking in the next step.

Now, let’s add some seasoning magic to the mix. Add the diced red bell pepper, 3/4 tsp salt, 1/2 tsp black pepper, 1/2 tsp garlic powder, and 1/2 tsp smoked paprika. Stir everything together to marry the flavors.
Continue cooking for an additional 3-5 minutes, or until the sweet potatoes are fork tender.
Finally, it’s time to bring the gang back together! Add the cooked sausage and onions back to the skillet and combine them with the sweet potatoes and peppers. Cook for 1-2 more minutes to let the sausage reheat. And voila! Your Sweet Potato Hash is ready to steal the spotlight on your breakfast table.
